WARM GOAT CHEESE LOGwith crunchy caramelised topping
- 1 goat cheese log (large)
- 100 g cane sugar
- 50 g unsalted butter
- 50 g sunflower seeds
- 50 g pumpkin seeds
- 50 g sesame seeds
- 50 g black quinoa
- 50 ml balsamico syrup
- 100 g dried cranberries, roughly chopped
- 50 g flat leaf parsley, roughly chopped
- Crusty bread to serve
- Freshly ground pepper
Turn the oven on at 150 degrees.
Heat a heavy based non stick frying pan at medium heat. Add the cane sugar gradually and let the sugar caramelize to a light golden caramel. Add the butter and stir to combine. Add all the seeds and quinoa and stir well until well combined.
Pour the hot mixture onto a tray lined with baking paper. Let cool completely.
Meanwhile place the goat cheese log on an oven tray lined with baking paper. Warm the log in the oven for 8-10 minutes. Place the log on a serving dish and top with the caramelised seeds, cranberries, a drizzle of balsamico syrup and chopped parsley.
Season with freshly ground pepper to taste.
Serve warm with crusty bread.
