
SALAD OF BAKED MARINATED TOMATOES
with Danablu cheeseIngredients
Cheeses
- 50 g + IQF cherry tomatoes (defrosted) (6 x 9 g pieces per portion)
- 25 g per portion Emborg Dana blu
Croutons
- Baguette bread sliced thinly (as needed)
- Emborg Grana Padano (as needed)
- Olive oil (as needed)
- Crushed garlic (as needed)
Marinated cherry tomato salad
- 100 g Blanched and peeled red cherry tomatoes
- 100 g Blanched and peeled yellow cherry tomatoes
- 50 ml Olive oil
- 20 g Sugar
- 20 ml Malt vinegar
- 3 g Salt (1/2 teaspoon)
Baked cherry tomatoes
- 100 g Red cherry tomatoes cut in half
- 100 g Yellow cherry tomatoes cut in half
- 50 ml Olive oil
- 10 g Sugar
- 10 g Garlic minced
- 5 g Basil leaves
Raspberry-malt vinegar
- 50 g Defrosted raspberries
- 20 g Malt vinegar (to taste)
- 80 ml Olive oil
- Salt pinch
- Lemon juice - drops to taste
- Black pepper - a few grinds of the mill
Method
Croutons
Drizzle the sliced baguettes with olive oil and top with some shredded Gran Amici and garlic - bake crisp in the oven at 180 degrees Celsius until crisp and aromatic. Break into smaller pieces and arrange on the salad.
Marinated cherry tomato salad
Cut the blanched tomatoes in half gently and mix all carefully in a bowl - leave to infuse at room temperature for 20 minutes covered, then transfer to a covered container and store in the chiller.
Baked cherry tomatoes
Mix all in a small oven proof tray and bake at 120 degrees Celsius for 70 to 90 minutes - cool and transfer to an airtight container and keep cold.
Raspberry-malt vinegar
Crush the raspberries with a fork - adding all the other ingredients while crushing. To have a semi separated look to the vinaigrette.
Toss the two types of tomatoes with some of the raspberry vinaigrette. Arrange neatly on a plate. Garnish with fresh rocket, watercress and/or basil.
Place the Dana blu pieces near the raspberry vinaigrette areas and arrange the croutons around.
Note to the taste composition - using the fresh, tart and fruity raspberry vinaigrette to counter the sweet pungent Dana blu with the pure sweet cherry tomatoes gives a very aromatic summer like salad. The crispy and savory baguette croutons is a great additional to the salad.
