BRUSCHETTA WITH GOAT CHEESE

Ingredients

  • Emborg goats cheese log, cut into 1cm thick slices
  • 400 g Cherry tomatoes
  • 1 tbs. Extra virgin olive oil
  • 1/2 tsp. Salt
  • Bread of choice, sliced
  • Balsamic vinegar reduction
  • Basil leaves to garnish

 

 

Method

Preheat oven to 220 degrees celcius.

Add cherry tomatoes to a bowl along with olive oil and salt. Toss and spread tomatoes on a tray with baking sheet. Bake in oven for 20 mins until soft and tender. 

Meanwhile toast or grill bread to liking. Add a slice of goat cheese and top with the roasted tomatoes.

Garnish with fresh basil and a drizzle of balsamic vinegar reduction.
