BREAKFAST BURRITO BITEwith Cheddar Cheese
Serves 10 people
- 10 wheat tortillas, approx. 20 cm
- 50 mg Emborg Butter
- 12 eggs
- 150 ml Emborg Milk
- 1 red pepper
- 1 bunch coriander or basil
- 300 g small pieces of diced ham
- 300 g frozen Emborg Sweet Corn
- 1 tsp chilli
- 1 tsp cumin
- 400 g grated Emborg Cheddar
Cut the tortilla into 4 pieces and place in buttered metal muffin tins. Whip the egg and the milk together. Cut the red pepper into small pieces. Chop the herbs. Add seasoning to the mixture of red pepper, herbs, ham and sweetcorn.
Divide the ham between the tortillas and top with the egg mixture and grated cheddar. Bake in the oven at 200 degrees for 18 minutes.
